This is a great lunch to make if you, like me, are a broke foodie.
Ingredients are garlic, bay leaf, water, salt & freshly ground pepper.
I had two tomatoes that were about to become overripe so used those too.
Method: crush the garlic chop up the tomatoes, add all ingredients to 4 cups of water. This you bring to a boil then simmer for 15 minutes.
Finish up with toast or crusty bread if you have it, and freshly grated Parmesan cheese. I buy my cheese from Costco and it lasts forever.

Cooked up some scallops for lunch – nice and fresh from the fish guys at the farmers market – Crap! This may be the last one this year!! 😦
This is super easy to cook
One tablespoon butter, one tablespoon olive oil, salt, ground pepper, juice of 2 limes, ginger and garlic, spring onions.
Cook the scallops in the butter and oil on a medium hot pan (add salt and pepper)… remove scallops, add the lime juice, scrape up all the burnt on goodies and add the rest of the ingredients to make the sauce. Pop your scallops back in the pan give it about a minute you’re done. The whole thing only takes 10 to 15 minutes to cook.
